Spanish potato casserole with chorizo

Ingredients for 4 servings:

  • 500 g potatoes
  • 4 chorizo
  • 3 onions
  • 4 sprigs of thyme
  • 1 tsp paprika powder, hot
  • 1 tsp pepper
  • 2 garlic cloves
  • 100 ml dry white wine
  • 150 g feta cheese or Manchego

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Peel the onions and slice them into large wedges. Peel the garlic and press it lightly. Peel and slice the potatoes. Slice the chorizo. Grate the cheese. Combine all ingredients except the cheese and wine in a baking dish, then pour the wine over the cheese. Sprinkle with cheese. Bake the casserole in the oven at 180°C (top/bottom heat) for about 45 minutes. If the cheese is overbrowning, cover the dish with aluminum foil.
