Apple and cinnamon scones

Ingredients for 1 servings:

  • 1 apple
  • 20 g honey
  • 1 tbsp cinnamon powder
  • 240 g spelt flour type 630
  • 3 g salt
  • 1 ½ tsp baking powder
  • 175 g Greek yogurt
  • 50 g butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

makes 8 – 10 scones

Preheat the oven to 250°C (top/bottom heat). Peel and core the apple, and cut into small pieces. Toss the pieces with the honey and cinnamon in a bowl. Mix the flour, salt, and baking powder in a second bowl. Add the yogurt and coarsely grate the butter over the apple. Mix with your hands until a dough forms. Carefully mix in the apple pieces at the end. Scoop out about 8-10 equal-sized pieces from the dough. I weighed them (about 60 g) and placed them on a baking sheet lined with baking paper. Bake in the preheated oven on the middle rack for 10-15 minutes until golden brown. Remove from the oven and serve warm.
