Artichokes in tomato salsa

Ingredients for 4 servings:

  • 8 artichoke(s) from the can
  • 4 tomatoes
  • 4 cloves garlic
  • 1 onion(s)
  • 3 pinch(s) paprika powder, rose hot
  • ½ tsp Allspice de la Vera
  • 1 tsp dried Mediterranean herbs
  • 6 mint leaves
  • 1 tsp sea salt
  • 1 tsp sugar
  • 2 tbsp vinegar
  • 2 tbsp olive oil

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Drain the artichokes and quarter them. Peel and finely chop the onion and garlic. Remove the stems from the tomatoes and dice them. Heat the oil in a pan. Add the onion and garlic and let them become translucent. Then add the tomatoes and simmer for about 10 minutes. Add the chopped mint. Then add all the other ingredients. Season to taste and adjust the seasoning if necessary. Add the artichokes to the pan last. They’re already cooked. Let everything simmer for about 10 minutes on the turned off but still warm stovetop. This starter tastes great hot or cold. It’s also easy to prepare. Serve with a fresh baguette and you have a great little snack.
