Ingredients for 4 servings:
- 1 ½ kg squid(s) (octopus)
- 1 onion(s)
- salt and pepper
- oil
- 1 tbsp vinegar
- 2 bay leaves
- 5 garlic cloves
- Paprika powder

Gut the octopus or buy it already gutted, clean it, and cut off the antennae. Carefully squeeze out the ink. Rinse it under cold water. Fry it in a pan with a little oil until the liquid begins to run. Wait until the liquid has evaporated, then add water. Slice the onion and add it with the bay leaves, pepper, and vinegar. Simmer for 2.5 hours, until the meat is tender. Drain the octopus in a sieve and cut it into bite-sized pieces. Place it in a bowl and add the oil and crushed garlic cloves. Season with paprika, stir well, and let it marinate in the refrigerator for about 60 minutes. Season to taste with salt and pepper. Serve with white bread, lettuce, or tomato salsa.
