Ingredients for 2 servings:
- 1 kg mussel(s) (clams)
- olive oil
- 5 garlic cloves
- 1 bunch of parsley
- 1 jar white wine, dry
- 1 jar water
- Salt

Chirlas al ajo – a Spanish friend’s recipe, very simple and delicious!
Before cooking, let the clams stand in a container of salted water for at least an hour; any sand will settle to the bottom. Finely chop the garlic and parsley. Cover the bottom of a frying pan with olive oil and heat it, add the garlic, and brown it lightly. Add the clams, making sure each one is touching the oil. Shake the pan occasionally if necessary. Add the white wine, water, and salt, and simmer over low heat until the clams open. Sprinkle with parsley and serve. Serve with baguette and a mixed salad.
