simple recipe from a chef
Rinse the frozen prawns briefly and place them in a tightly sealed bowl. Place the garlic, salt, oil, and sambal in a narrow container, then finely grind the ingredients with a hand blender. Pour this mixture over the prawns. The prawns will thaw gradually, so you should stir them occasionally. Marinate for a few hours. Caution: Thawing creates a watery broth, and that’s how it’s supposed to be! Heat plenty of olive oil in a pan. Remove a good portion of the prawns with a slotted spoon, drain well, and then add them to the hot oil. The prawns are ready when they curl up. DO NOT leave them in for any longer, or they’ll become tough. Tip: Serve with a Mediterranean mixed salad and my flatbread… and maybe a few olives as well.
