Fiery chicken stew

Ingredients for 4 servings:

  • 1 ½ kg chicken thighs
  • 2 onions
  • 3 garlic cloves (finely chopped)
  • 3 tomatoes
  • 1 chili pepper(s) (red)
  • 3 tbsp olive oil
  • 2 bay leaves
  • 250 ml red wine
  • 1 bunch of parsley
  • Salt and pepper (from the mill)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Season the chicken thighs with salt and pepper. Dice the onion and garlic cloves. Quarter the tomatoes. Deseed the chili and cut into small rings. Heat the oil in a roasting pan, brown the chicken pieces all over, then remove. Sauté the onions, garlic, chili, and tomatoes, then arrange the bay leaves and chicken thighs on top. Pour in the wine and cook in a covered pan for about 45 minutes. Season to taste and sprinkle with chopped parsley. If there’s not enough liquid, simply add more red wine. Serve with fresh baguette.
