Ingredients for 4 servings:

  • 1 chicken, cut up and skinned
  • 500 g tomatoes, peeled, pitted and chopped
  • 10 shallots, diced
  • 20 black olives, pitted and chopped
  • 1 jar anchovy fillet(s), rinsed and finely chopped
  • 1 tsp thyme
  • 1 tsp rosemary
  • 3 clove(s) garlic, squeezed
  • 200 ml dry white wine
  • 200 ml chicken broth
  • 4 tbsp olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the oil and fry the chicken pieces. Add all the remaining ingredients and simmer for 1 hour. Serve with rice.
