Ingredients for 4 servings:
- 1 chicken, cut up and skinned
- 500 g tomatoes, peeled, pitted and chopped
- 10 shallots, diced
- 20 black olives, pitted and chopped
- 1 jar anchovy fillet(s), rinsed and finely chopped
- 1 tsp thyme
- 1 tsp rosemary
- 3 clove(s) garlic, squeezed
- 200 ml dry white wine
- 200 ml chicken broth
- 4 tbsp olive oil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Heat the oil and fry the chicken pieces. Add all the remaining ingredients and simmer for 1 hour. Serve with rice.
