Swiss chard with vinaigrette

Ingredients for 4 servings:

  • 500 g chard
  • 3 tbsp balsamic vinegar, maybe a little more – depending on your taste
  • 3 tbsp olive oil
  • Salt
  • 1 pinch(s) of sugar
  • 15 clove seeds, peppercorns or coriander (finely crushed)

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Wash the chard, separate the leaves from the stems, and cut each into bite-sized pieces. Cook the stems in boiling salted water for about 5 minutes, add the leaves, bring to a boil, and then cook together for about 3 minutes more. Drain the water and immediately rinse the vegetables with cold water (to retain their color) and drain in a sieve. Mix the remaining ingredients for the vinaigrette well. Place the chard in a shallow bowl, pour the vinaigrette over it, and let it sit for a while. The whole thing tastes particularly delicious if you sprinkle some coarsely grated Pecorino over it before serving. Delicious as a starter! Ciabatta goes well with it.
