Swedish eggs with peas, cream cheese and caviar

Ingredients for 4 servings:

  • 4 eggs
  • 1 handful of green peas
  • 1 tbsp dill, chopped
  • 1 tbsp chives, chopped
  • 3 tbsp cream cheese
  • Salt and pepper, black, freshly ground
  • 1 jar caviar, red
  • some lemon peel, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 28 minutes

as part of a buffet or as a small starter

Cook the peas for 3 minutes, drain the water, and rinse them under cold water. Cook the eggs for 8 minutes, then peel and halve them. Remove the yolks and mix with the herbs, cream cheese, and cooked peas. Season with salt and plenty of pepper. Pipe the filling into the eggs. Place a teaspoon of red caviar on top. Garnish with dill or chives and a little grated lemon zest. Serve well chilled.
