Original Swedish Christmas gingerbread

Ingredients for 1 servings:

  • 255 g sugar
  • 100 ml water
  • 50 ml syrup, alternatively honey
  • ½ tbsp cinnamon, ground
  • ½ tbsp cardamom, ground
  • ½ tbsp ground ginger
  • ½ tsp clove(s), ground
  • 200 g margarine or butter
  • 2 tsp baking soda
  • 600 g flour (wheat flour)
  • possibly cognac

Instructions

Working time approx. 35 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 35 minutes

Pepparkakor

Boil the water with the sugar and spices. Then let it cool slightly and gradually add the fat. Adults can add 2 tablespoons of cognac. Stir vigorously. Mix the wheat flour with the baking soda and add it to the sugar mixture. Quickly knead into a smooth dough and refrigerate until the next day. Roll out the dough thinly and cut out cookies as desired. Place them on a baking sheet lined with baking paper and bake at 200°C on the middle rack for 5-10 minutes.
