Ingredients for 1 servings:

  • 250 g butter
  • 125 g sugar
  • 400 g flour
  • 1 egg yolk
  • 1 pinch of salt
  • 1 egg white
  • 100 g sugar
  • 1 tsp cinnamon powder
  • 5 tbsp jelly (currant jelly)

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Cookies from Sweden

Quickly knead the butter, sugar, egg yolks, salt, and flour into a dough. Divide the dough into 4 pieces and shape into 4-cm-diameter logs. Wrap in cling film and refrigerate for 1 hour. Cut approximately 4-mm-thin slices from the logs and place them on a baking sheet lined with baking paper. Lightly beat the egg whites and brush them over the cookies. Mix the sugar and cinnamon and sprinkle over the cookies. Bake the cookies in a preheated oven for 8-10 minutes (200°C for electric ovens). Remove and let cool. Warm the currant jelly and sandwich two cookies together with a little jelly.
