Chicken with lemon

Ingredients for 4 servings:

  • 1 chicken (roast chicken)
  • 1 onion(s) (vegetable onion)
  • 1 stalk(s) leek
  • 3 garlic cloves
  • 3 lemons
  • 125 ml wine, white, dry
  • 125 ml chicken broth
  • 1 bay leaf
  • 1 pinch(s) saffron, ground
  • 1 tomato(s)
  • 1 jar olives, green
  • 6 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the chicken into pieces. Rub with salt and pepper. Peel the onion and leek, then slice both into rings. Peel and finely chop the garlic. Sauté the chicken pieces thoroughly in hot olive oil. Add the onion and leek and fry briefly. Add the garlic and pour in the lemon juice, wine, and chicken stock. Season with salt, pepper, bay leaves, and saffron and simmer for about 30 minutes. Peel the lemons, slice them thinly, and add them along with the olives and tomato quarters. Reduce the liquid. Garnish with parsley and serve with white bread.
