Chicken with basil and fresh tomatoes

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s) (skinless and boneless)
  • 1 tbsp extra virgin olive oil
  • 1 small onion(s), finely chopped
  • 2 garlic cloves, finely chopped
  • 500 g tomatoes, ripe, small chopped
  • 150 g mushrooms, sliced
  • 125 ml wine, white, dry
  • Salt and pepper, ground black
  • 1 bunch basil (leaves cut into strips)

delicious with tagliatelle

Cut the meat into bite-sized pieces. Heat the oil in a non-stick pan over medium heat. Sauté the onion and garlic, stirring constantly, until the onion is golden brown (about 5 minutes). Transfer both to a plate with a slotted spoon. Add the meat to the pan and cook for another 5 minutes, stirring continuously, until lightly browned. Add the tomatoes, mushrooms, wine, salt, and pepper. Return the onion and garlic to the pan, mix well, and bring to a boil. Reduce the heat and simmer for about 15 minutes, until the liquid has reduced by about half. Add the basil and mix. Remove the pan from the heat and let it infuse briefly. This goes wonderfully with tagliatelle, but other pasta dishes are also delicious.
