Portuguese milk pudding with coconut

Ingredients for 6 servings:

  • 800 ml milk
  • 100 g desiccated coconut
  • 10 eggs
  • 300 g sugar
  • Caramel syrup, ready-made product or homemade
  • Powdered sugar or desiccated coconut

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Pudim de ley and coconut

Take a loaf pan and generously grease it with caramel. The caramel will later become liquid and serve as the sauce for the pudding, similar to the flans and puddings made in Portugal, Spain, etc. Bring the milk and desiccated coconut to a boil while stirring. Set the pan aside. Beat the eggs and sugar until frothy. Add the coconut milk and beat again with a hand mixer. Pour the mixture into the loaf pan and bake in a water bath at 160°C (top/bottom heat) in a preheated oven for 50 minutes. Please leave the oven closed. Allow the pudding to cool completely in the pan before turning it out. Sprinkle the dessert with powdered sugar or desiccated coconut. Done!
