Almond soup with tomato

Ingredients for 6 servings:

  • 350 g tomatoes, steamed
  • 1 red bell pepper(s), cleaned and chopped
  • 2 slice(s) bread(s), pão or firm farmer’s bread, torn
  • 450 ml water
  • 5 garlic cloves
  • 1 tsp paprika powder
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Garlic and tomato soup

Puree the tomatoes, bell peppers, bread, and water in a blender to make a thick soup. Add more water if necessary. Grind the garlic with a pinch of salt into a paste. Gently heat the bell peppers in the oil in a saucepan for about 1 minute. Stir in the garlic and add the soup. Season with salt and pepper to taste. Bring the soup to a boil and simmer for 10 minutes, stirring occasionally.
