Ingredients for 1 servings:
- 1 handful of arugula
- 5 tbsp balsamic vinegar, dark
- 1 tbsp sugar
- 10 g pine nuts, halved
- 5 cherry tomatoes, halved
- Parmesan
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Wash the arugula, shake dry, trim the stems, and arrange in a pile on a plate. Mix the balsamic vinegar with the sugar well. Spread the pine nuts and cherry tomatoes over the salad, drizzle with balsamic vinegar, and sprinkle with Parmesan cheese. My absolute favorite salad, which I had at a restaurant in Lisbon. Simple yet sophisticated.
