Ingredients for 1 servings:

  • 8 eggs
  • 1 pinch of salt
  • 400 g sugar
  • ½ tsp cinnamon powder
  • 1 tsp. clove powder
  • 1 lemon(s) (organic), untreated
  • 250 ml extra virgin olive oil, mild
  • 250 g flour
  • 8 g baking powder
  • Flour or breadcrumbs for the mold

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Olive oil cake from Portugal

Wash the lemon, dry it, and grate the zest. I made the batter with a Kitchen Aid. Separate the eggs. In a bowl, whisk the egg whites with a good pinch of salt until stiff peaks form and set aside. In a new bowl, whisk the egg yolks with sugar, cinnamon, cloves, and lemon zest until frothy. Gradually add the olive oil and continue whisking. Now use the flat beater. Mix the flour with the baking powder and add to the mixture, along with a good third of the stiffly beaten egg whites. Mix everything well and finally, carefully fold in the remaining egg whites with a spoon. Grease a rectangular baking dish (35 x 24 cm) and dust with flour or breadcrumbs, pour in the batter, and bake in the oven at 200°C for about 30 minutes. Do the skewer test after 25 minutes. The cake shouldn’t stay in the oven too long so it doesn’t become too dry. I had it in the oven for 30 minutes and it turned out beautifully moist. In Portugal, people like to eat very sweet food. If you don’t like it so sweet, just use 300g of sugar and one less egg.
