Ingredients for 1 servings:
- 300 g flour
- ½ tsp baking soda
- 1 pinch of nutmeg
- 250 g butter
- 200 g brown sugar
- 2 tbsp honey
- Butter for greasing the baking tray
- 1 handful of walnuts, halved
- Cane sugar for sprinkling

Honey pastries from Madeira
Makes about 12 large cookies. Sift together the flour, baking soda, cinnamon, and nutmeg. Mix in the butter, sugar, and honey by hand, softening the butter with the warmth of your hands. Knead until a soft, smooth dough forms. Let the dough rest for half an hour. Preheat the oven to 190°C (375°F). Grease a baking sheet with butter. Using a tablespoon, scoop out pieces of dough, place a walnut half on top of each, sprinkle with sugar, and place on the baking sheet, leaving plenty of space between them. Bake the cookies for 10-12 minutes, until golden brown. Place on a wire rack to cool.
