Ingredients for 24 servings:

  • 250 g flour
  • 125 g butter
  • 150 g sugar
  • ½ cup water
  • 150 g almond(s), ground, peeled
  • 9 egg yolks
  • 1 egg(s)
  • powdered sugar

St. Clare’s dumplings

Mix the flour and butter and knead with moistened hands until you have a smooth, moist dough that can be rolled out. For the filling, mix the sugar with the water and warm it up. Moisten your fingers with cold water. Squeeze a drop of sugar water between two fingers and stretch it apart: when the sugar water has the right consistency, it will form a coarse thread. Remove the sugar water from the heat, add the almonds and the beaten egg yolks. Roll out the dough and use a glass to cut out 10 cm circles. Place 1 teaspoon of filling in the center of each circle and fold them over to form a half-moon. Brush with beaten egg and sprinkle with sugar. Preheat the oven to 180°C, add the pies, and bake until they begin to turn golden brown. Remove from the oven, let cool, and sprinkle with powdered sugar.
