Ingredients for 1 servings:

  • 110 g pine nuts, crushed
  • 75 g corn flour, finely ground
  • 25 g flour, wheat flour
  • 110 g sugar
  • 1 tsp anise, ground
  • 3 eggs, beaten until frothy

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pine cookies

Preheat the oven to 220°C (425°F). Thoroughly mix the pine nuts, cornmeal, flour, sugar, and anise in a large bowl. Fold in the eggs. Drop the mixture a teaspoon at a time onto a baking sheet lined with parchment paper. Leave plenty of space between the cookies so they can rise without sticking together. Sprinkle each cookie with pine nuts. Bake for 20-25 minutes, until the edges are crisp and the tops are golden brown. Transfer to a wire rack to cool.
