Moroccan-style mixed salad

Ingredients for 3 servings:

  • 150 g rice
  • 2 tomatoes
  • 3 artichokes
  • 3 potatoes
  • 3 carrots
  • 1 can of tuna
  • some olives
  • some peppermint or parsley
  • Vinaigrette
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice in salted water until tender (1:2 ratio). Mix with the tuna and season with salt and pepper. Meanwhile, cook the artichokes in salted water for 10 minutes. Then halve them and remove the hay. Wash and slice the tomatoes. Wash and peel the carrots and potatoes, cut them into small cubes, and cook them in salted water until tender. Drain and pour the vinaigrette over them. Place the rice and tuna mixture in the center of a large plate. Arrange the carrot and potato mixture around it. Place the tomatoes on top and sprinkle with salt. Place the artichokes around the edge of the plate. Garnish with olives and parsley or peppermint.
