Ingredients for 4 servings:

  • 8 small potatoes, peeled
  • 8 small onions, peeled
  • 8 small tomatoes
  • 2 m.-sized zucchini, halved or quartered lengthwise
  • 2 medium-sized bell peppers, quartered
  • 4 m.-large carrot(s), slender, peeled, cut into thirds crosswise
  • 1 tsp oregano
  • 1 tsp savory
  • 1 tsp paprika powder (rose pepper)
  • Salt and pepper, freshly ground black
  • 100 g yogurt
  • 50 g sesame paste (tahini)
  • 1 bunch of smooth-leaf parsley, small bunch
  • 1 tbsp lemon juice
  • Salt
  • Oil (olive oil), for the tray

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brush a baking sheet with olive oil. Arrange all the vegetables in a row and bake in a preheated oven at 250°C for 20 minutes. Remove the baking sheet and season the vegetables. Return to the oven for 10 minutes. Mix the sauce ingredients together, then add the chopped parsley and serve.
