Ingredients for 8 servings:

  • 4 pig’s feet
  • 2 limes, squeezed
  • ½ tsp sugar
  • 3 tsp salt
  • ½ tsp black pepper
  • 3 clove(s) garlic, chopped
  • 4 cucumber(s), thinly sliced
  • 2 onions, cut into rings
  • 2 chili peppers, finely chopped
  • Parsley

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 3 hours; Total time approx. 9 hours 15 minutes

pickled pig’s feet from Trinidad and Tobago

Have the butcher cut the pig’s feet into two or three pieces and simmer them in salted water for three hours over low heat. They’ll seem soft even beforehand, but they’ll still be difficult to chew afterward! Rinse and let them marinate in a liter of fresh water with all the spices and ingredients in the refrigerator for several hours. Adjust the chili to your liking. Season again with salt, pepper, and lime juice before serving, and sprinkle with chopped parsley. Eat by hand.
