Ingredients for 4 servings:

  • 2 cup(s) peanuts, unsalted
  • 2 cups sugar
  • 1 cup(s) water

Roasted peanuts, recipe from Brazil

The peanuts are best when fresh, but they’re hard to come by here. I shell my own peanuts; they’re not too dry yet. Put all the ingredients in a pot, bring to a boil, and continue cooking over medium heat, stirring constantly. When the sugar sticks to the nuts and the bottom is visible, keep stirring until all the water has evaporated and the nuts are completely coated in sugar. Pour everything onto a large baking sheet and let it cool. This mixture is perfect for filling Easter eggs during Easter, but it also makes a delicious snack on its own.
