Ingredients for 1 servings:

  • 4 cup(s) cassava (approx. 600 g), cooked
  • 2 tbsp parsley, finely chopped
  • 4 tbsp cheese, grated
  • 1 tbsp baking powder
  • 4 eggs
  • Salt
  • pepper
  • e.g. oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brazilian cassava balls

Mash the cooked cassava with a fork. Then add the parsley, eggs, cheese, and baking powder and mix well. Season with salt and pepper to taste. Using two spoons, drop the mixture into small balls in a pan with hot oil. Fry until lightly golden brown. Remove the balls and place them on kitchen paper to absorb any excess fat. This amount makes about 30 balls (the amount depends on the size, of course). Tip: This dish tastes great with Tabasco or olive oil marinated in pepper (Brazilian pepper or peperoncini). Cassava can be bought pre-cleaned, in pieces, or frozen in good Asian or African stores.
