Christmas red wine pears

Ingredients for 4 servings:

  • 4 bulb(s)
  • 1 butter
  • 1 tbsp brown sugar
  • 1 cup of wine (mulled wine)
  • 1 pinch of cinnamon
  • 50 g marzipan (raw mass)
  • 1 dash of cream
  • 1 dashes lemon juice if needed

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel, quarter, and core the pears. Place the butter and sugar in a saucepan and caramelize, then deglaze with the mulled wine and season with cinnamon. Add the pears and sauté until softened, if desired. Remove the pears. Grate the marzipan into the hot mulled wine and dissolve it. Add the cream. Let the whole thing simmer until a thick, creamy sauce forms. If desired, add a little lemon juice to add a pleasant acidity to the rather sweet sauce. Just before serving, heat the sauce again. Add the pears again and warm them through, then serve. You could then serve it with vanilla ice cream and sprinkle everything with chopped nuts. This recipe came about when I once needed to use up overripe pears. I simply put everything I had on hand into the pan that seemed right to me. I’m already excited to see any variations.
