Ingredients for 2 servings:

  • 350 g potatoes, raw
  • 350 g potatoes, floury, boiled, peeled
  • 350 g flour
  • ½ pack of baking powder
  • 150 ml milk
  • Salt and pepper from the mill
  • Flour for the work surface
  • possibly chives
  • possibly garlic
  • possibly fried onions
  • possibly marjoram

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Irish potato bread, makes 2 loaves

Preheat the oven to 200°C (fan oven). Finely grate the raw potatoes. Squeeze the raw potatoes into a cloth. Mash the cooked potatoes. Mix with the grated potatoes. Add the milk and mix everything together. Season with salt and pepper. Add flour and baking powder. Knead everything into a dough. If it’s too soft, add a little more flour. Divide the dough into 2 portions and shape into flat loaves on a floured surface. If you want to make it Irish-style, you can cut a cross into each loaf. Bake in the oven for about 30 minutes, until they are light brown and have risen. Serve with butter or warm butter. To change the flavor of the bread, you can add chives, a crushed garlic clove, fried onions, or dried marjoram to the dough.
