Cretan dakos with tomatoes, feta and pine nuts

Ingredients for 4 servings:

  • 4 slice(s) rusk, Greek (Dako) or toasted bread
  • some water
  • 4 tomatoes, pureed
  • ½ pack of feta cheese, grated
  • 3 tbsp olive oil
  • ½ tbsp oregano
  • 1 tbsp pine nuts, roasted
  • 1 tbsp olives, black

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dip the rusk into a bowl of cold water for about 3 seconds (no longer, or it will become too soft) and place it on a serving dish. If using toasted bread, don’t immerse it in the water, but place it immediately on a serving dish. First, spread the pureed tomatoes over the bread and then sprinkle evenly with the feta cheese. Drizzle with olive oil and sprinkle with oregano. Garnish with pine nuts and olives.
