Ingredients for 2 servings:

  • 240 g short grain rice
  • 1 large carrot(s)
  • 1 small onion(s)
  • 1 garlic clove(s)
  • some ketchup
  • 3 eggs
  • 1 shot of milk
  • oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Omelette with rice, gluten-free and easy, especially great for children

Chop the carrot and cook with the rice according to the package instructions. Whisk the egg with salt, pepper, and a splash of milk and set aside. Chop the onion and mince the garlic clove. Add it to a pan with a little oil and sauté over medium heat. Then add the cooked, drained rice and the carrot to the pan and mix everything well. Season with ketchup, salt, and pepper. Using a small bowl, shape the rice mixture into half-spheres and place them on the plates. Heat a little oil in a small pan and cook one omelet per serving. Place the omelets over the rice half-spheres. Finally, you can draw a cute face on them with ketchup.
