Ingredients for 4 servings:

  • 1 bunch of spring onions
  • 2 eggs
  • Soy sauce
  • pepper
  • 2 tsp vegetable oil
  • 200 g sugar snap peas
  • 3 bell pepper(s), red
  • 300 g bamboo slices, cut into strips (can)
  • 100 ml vegetable stock
  • 320 g rice, cooked
  • 1 tsp spice mix (Chinese spice)

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and halve the snow peas. Peel and halve the bell peppers. Drain and chop the bamboo shoots. Heat the remaining oil and fry the vegetables for about 5 minutes, stirring constantly. Then add the broth and cook for another 5 minutes. Stir in the cooked rice and the set egg mixture. Season to taste with soy sauce and Chinese seasoning and serve. 4 servings per person.
