Ingredients for 4 servings:
- 400 g peas, fresh
- 600 ml milk
- 8 tbsp parsley, washed and finely chopped
- ½ kg potatoes
- some salt and pepper, black, freshly ground
- some butter flakes
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Ulster Champ
Simmer the peas in the milk for about 8-10 minutes, adding the parsley during the last 2 minutes. Boil the potatoes in plenty of salted water, peel, and mash. Stir the cooked pea and milk mixture into the potato mixture, season with salt and pepper, and serve hot, garnished with knobs of butter.
