Greek Meze: Flambéed Prawns

Ingredients for 5 servings:

  • 400 g tomatoes, ripe
  • 1 onion(s)
  • 3 garlic cloves
  • 1 red chili pepper(s)
  • 1 small pointed pepper, green
  • 1 bunch of flat-leaf parsley
  • 1 kg shrimp(s), ready to cook, with shell
  • 200 ml ouzo
  • 250 g hard cheese, Greek
  • Salt and pepper, freshly ground
  • Olive oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the tomatoes and fry them in a pan with chopped garlic and finely chopped onions. Slice the chili pepper and pointed peppers into rings and add them as well. Season with chili flakes, chopped parsley, salt, and pepper. Briefly fry the shrimp on both sides in a hot pan with oil and deglaze with the tomato sauce. Pour over the ouzo and flambé. Serve on a platter and grate the cheese over the shrimp. Tip: If you’re using peeled shrimp, you can also pour the finished dish into small pans and bake them in the oven with the cheese.
