Pasta with tomatoes and arugula

Ingredients for 2 servings:

  • 300g spaghetti
  • 1 handful of arugula
  • 10 cherry tomatoes
  • Parmesan
  • 2 tbsp olive oil
  • 1 garlic clove(s)
  • salt and pepper
  • 1 pinch(s) of sugar
  • 1 tsp Ajvar, hot

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

delicious pasta dish for the summer, super quick to prepare

Prepare the spaghetti according to the package instructions. Wash and roughly chop the arugula (3-5 cm), halve the tomatoes, and grate the Parmesan cheese (3-4 tbsp). Heat the olive oil with the crushed garlic clove in a large pan. Add the cherry tomatoes, season with a little salt and sugar, and fry for about 5 minutes. Then remove the garlic clove and stir in the ajvar (you can omit the ajvar if you prefer a milder sauce). Then add the cooked spaghetti with about 8 tbsp of the cooking water, season with salt and pepper, and mix everything in the pan. Fold in the grated Parmesan cheese and chopped arugula and serve.
