Ingredients for 4 servings:

  • 4 eggs
  • 1 small bunch of spring onions
  • 2 m.-sized carrot(s), finely sliced
  • 2 tbsp mayonnaise
  • 1 tsp curry powder
  • 1 tsp mustard
  • 1 small jar of asparagus, finely chopped
  • 30 g cheese, mature, grated
  • 8 slices of toast (sandwich bread)
  • pepper
  • some arugula
  • some parsley, fresh, chopped

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the eggs until hard-boiled, then let them cool and chop them. Clean the spring onions, slice them into thin rings, and mix them with the eggs, mayonnaise, mustard, curry powder, asparagus, and cheese to form a paste. Season with pepper. Clean the arugula, cut it into short strips, and place it as the first layer on a slice of untoasted white bread. Spread the egg mixture on top and cover with the finely grated carrots. Sprinkle some fresh parsley over the top and top with another slice of white bread. Finally, slice the sandwich diagonally in the traditional way and serve. Tip: Cut all ingredients as small as possible to make it easier to eat and prevent it from falling apart when you bite into it. Alternatively, diced ham can be added to the base mixture.
