English dessert for a late lunch or with coffee

Knead the flour with the butter, salt, and ice water (adding a tablespoon at a time, enough to create a rollable dough) and immediately roll out the dough so that you can cut out a larger and a smaller sheet of dough for a fruit tart dish. Line the tart dish with the larger sheet of dough, peel and core the apples, and cut them into small wedges. Mix these well with the lemon zest and juice, sugar, vanilla sugar, spices, and cornstarch, and spread evenly over the dough. Cover everything with the smaller sheet of dough and press the edges together firmly. Bake in the oven at approx. 200°C for approx. 40 minutes. Cover the still-hot apple pie with apricot jam and the powdered sugar dissolved in hot water. Serve as soon as possible!
