Ingredients for 1 servings:
- 200 g flour
- 100 g butter, soft
- 3 egg yolks
- 75 g sugar
- 1 pinch of salt
- ¼ tsp organic lemon peel, grated
- 1 tbsp Calvados (alternatively cognac)

Sweet shortcrust pastry
Sift the flour into a bowl, make a well in the center, and add the softened butter, egg yolk, sugar, salt, grated lemon zest, and Calvados. Quickly mix the ingredients in the well with your fingers, gradually incorporating the flour. Knead the resulting dough thoroughly and, if it’s not moist enough, add 1 tablespoon of water. Carefully shape the dough into a ball, wrap it in cling film, and chill for at least 30 minutes.
