Ingredients for 1 servings:

  • 1 tomato(s)
  • 1 bell pepper(s) and/or pepper
  • 1 eggplant(s)
  • 1 garlic clove(s)
  • 1 spring onion(s) or shallot
  • 1 package of feta cheese, or another cheese
  • 1 slice(s) cheese (goat gouda or other melting cheese)
  • some coriander, basil or mint

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 9 minutes

a Greek starter

Cut the vegetables and feta into small cubes. Mix the ingredients and place them fairly flat on an oven- or microwave-safe plate. Tear the Gouda slice into pieces and cover the pile of vegetables with them. Place the plate in the microwave or oven and cook at 800-1000 watts for 4 minutes or bake at 180°C until the cheese is melted. Finely chop the cilantro and sprinkle over the boujourdi. Serve with bread. Tip: You can use any vegetables for the boujourdi, and any meltable cheese for the topping. The ratio of vegetables to feta is about 2 to 1.
