Grilled Mediterranean feta parcels

Ingredients for 2 servings:

  • 200 g feta cheese
  • 1 large tomato(s)
  • ½ onion(s)
  • 1 jar olives, black
  • 1 bell pepper(s)
  • 1 clove(s) garlic
  • 1 jar artichoke hearts pickled in oil
  • 2 leaves of fresh basil
  • 2 tbsp basil, dried
  • 2 tbsp olive oil or pepper oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with tomatoes, peppers, olives and artichoke hearts

Prepare two equal-sized pieces of aluminum foil and brush them with olive oil. Halve the feta cheese to create two equal blocks of feta cheese. Cut these in half again lengthwise, down the middle. Place the two slices of feta cheese on the aluminum foil brushed with olive oil. Finely dice the garlic clove and sprinkle a little, to taste, on the feta cheese. Sprinkle with some dried basil. Slice the tomato and place two slices on the feta cheese. Place onion rings on top of the tomatoes. Place strips of bell pepper on top of the onion rings, then add two pieces of artichoke hearts, and then about 6-7 olives on top. Season with a little more garlic, to taste, add two or three fresh basil leaves, and sprinkle with more dried basil. Then wrap the aluminum foil with the feta cheese into a parcel and place on the grill for about 10 minutes. The feta cheese should be nice and soft. It can also be prepared in the oven. Cooking time is approximately 15 minutes.
