Ingredients for 4 servings:

  • 1 small baguette(s) or other white bread
  • 3 tomatoes
  • 1 large garlic clove(s)
  • e.g. basil, some fresh leaves
  • some oregano
  • Salt
  • 4 tbsp extra virgin olive oil

Cut the bread into 1 1/2 cm thick slices and either toast until crispy or, ideally, grill (you can also use a grill pan). Meanwhile, dice the tomatoes, chop the basil, and mix with the oregano, salt, and olive oil. Peel and halve the garlic, and rub it all over the hot slices of bread. Distribute the tomatoes among the slices of bread and serve immediately to keep the bread crispy. Tip: You can also omit the garlic and finely chop a small onion and add it to the tomatoes instead. If you like it a bit spicier, stir in a pinch of chili pepper and a dash of white balsamic vinegar.
