Ingredients for 3 servings:
- 200 g rice
- salt and pepper
- 400 g minced beef
- 2 tbsp oil
- 1 stalk(s) leek
- 2 bell peppers
- 1 eggplant(s)
- 2 cloves garlic
- 100 g feta cheese
- oregano
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the rice in salted water. In the meantime, dice the bell pepper and slice the leek. Cut the eggplant into slightly thicker slices and sprinkle with salt. Let it simmer. Crumble the feta cheese and mix with a little oregano. Fry the minced meat in oil for about 5 minutes until crumbly. Add the garlic and sauté briefly. Pat the eggplant dry, cut into pieces, and add to the minced meat along with the remaining vegetables. Cook for about 10 minutes. Drain the rice and fold in the feta cheese. Season with salt and pepper.
