Greek rice casserole

Ingredients for 3 servings:

  • 125 g rice
  • 1 tbsp oil
  • 300 g minced meat, mixed
  • 1 onion(s)
  • 300 g tomatoes
  • 200 g zucchini
  • salt and pepper
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 250 g sheep’s cheese
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the rice. Preheat oven to 200°C (fan oven). Meanwhile, heat oil in a non-stick pan and brown the minced meat. Peel and dice the onions and fry them. Wash the tomatoes, cut them into fairly large pieces, and add them to the pan. Remove the stems from the zucchini, slice them thinly, and add them to the minced meat. Simmer everything over medium heat for about 7 minutes. Season with freshly ground pepper and salt. Add fresh thyme and oregano (although dried herbs are also delicious). Add the cooked rice to the pan and mix all ingredients well. Pour the entire mixture into a lightly greased baking dish. Crumble the feta cheese and spread it over the Greek rice casserole. Bake on the middle rack of the oven for about 10 minutes. The feta cheese should look appetizing.
