Greek meatball skewers with feta and tomato rice

Ingredients for 4 servings:

  • 1 bread roll(s), dry
  • 1 onion(s)
  • 500 g minced meat
  • 1 egg(s)
  • n. B. Salt
  • n. B. Pfeffer
  • e.g. paprika powder
  • e.g. coriander
  • e.g. rosemary
  • 80 g feta cheese
  • 1 tbsp butter
  • 200 g rice (long grain rice)
  • 1 can of tomatoes, chopped
  • 400 ml meat broth

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Prepare a spicy meat dough from the first ingredients, including the rosemary. Dice the feta. Form the dough into approximately 24 small balls and fill each with a cube of feta. Wrap tightly in the meat dough. Thread 2-3 balls onto a wooden skewer and refrigerate. Heat butter in a saucepan, add the rice. Pour in the tomatoes, juice, and broth, season with salt and pepper, and simmer over low heat for 20 minutes. While the rice is cooking, fry the meatballs in hot oil on all sides for approximately 4 minutes. Serve the balls with tomato rice. Serve with a mixed salad!
