Working time approx. 30 minutes; Total time approx. 30 minutes
Greek casserole with feta, tzatziki and peppers
Cook the rice. Peel and slice the bell peppers and onions, then dice the feta. Fry the minced meat in a little oil until crumbly, season generously with salt, pepper, and cayenne pepper (and garlic if desired). Briefly fry the bell peppers and onions. Prepare the sauce in a small saucepan according to the package instructions and stir in the tzatziki. Season to taste with salt, pepper, and cayenne pepper. Grease a baking dish and layer it: half of the rice, the entire meat and vegetable mixture, the diced feta, and half of the sauce. Then add the remaining rice and the remaining sauce. Sprinkle with grated cheese and bake at 180°C for 30-40 minutes. Serve with coleslaw or cucumber salad. The casserole is also delicious the next day. It’s also great to prepare ahead of time; simply layer everything and refrigerate.
