Ingredients for 4 servings:
- 500g spaghetti
- 1 m.-sized onion(s)
- 150g pancetta
- 3 tbsp butter
- 2 eggs
- 100 g cheese (half Pecorino, half Parmesan)
- Salt and pepper, black
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
To Kaltenbach
Cook the spaghetti. Finely chop the onion and pancetta and fry in butter until golden brown. The onions should be very soft. In a preheated bowl, whisk the eggs with the cheese and plenty of pepper. Add the spaghetti to the bowl and quickly mix with the onion and pancetta. If you want to prepare the dish with cream, mix the cream (150 ml per person) with the eggs and heat the mixture in a bain-marie before stirring it into the hot pasta.
