Spaghetti Carbonara

Ingredients for 4 servings:

  • 500g spaghetti
  • 250 g bacon or pancetta, diced
  • 4 egg yolks
  • 1 cup Parmesan cheese, grated
  • 1 cup Pecorino, grated
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Cook the spaghetti in salted water according to the package directions until al dente. While the spaghetti is cooking, heat a large skillet over medium heat. Add the bacon or pancetta to the skillet and cook until crispy, about 8-10 minutes. In a small bowl, whisk together the egg yolk, Pecorino Romano, and Parmesan cheese. Reserve 1 cup of the pasta water, then drain the pasta. Add the pasta to the bacon in the skillet and stir until well blended. Remove the skillet from the heat and add the egg yolk mixture to the pasta, stirring quickly to combine. If the pasta is too thick, add a little of the reserved pasta water to reach your desired consistency. Season with salt and pepper and serve immediately.
