Ingredients for 4 servings:
- 4 figs, ripe, at least 1 per person
- 150 g Parma ham, very thinly sliced
- 1 ball/s of mozzarella (buffalo), approx. 125 g
- 3 stalks of basil
- 3 tbsp lemon juice
- 6 tbsp olive oil
- 1 tbsp honey
- 2 tbsp balsamic vinegar, good
- salt and pepper

Fine Italian starter
Cut a cross into the figs all the way to the stem, then squeeze the figs together at the bottom with your thumb and index finger to open them up and reveal the inside of the fruit. Wrap each fig with a slice of Parma ham and place it in a bowl. Scatter the mozzarella pieces between the slices and sprinkle with coarsely torn basil. Then, mix a dressing from the above ingredients and drizzle it over the salad. It’s important that a little of the dressing gets inside the figs. Serve with some bread to mop up any leftover dressing—it would be a waste!
