Refreshing summer salad with watermelon and arugula

Ingredients for 2 servings:

  • 2 tbsp pumpkin seeds
  • 400 g melon(s) (watermelon)
  • 125g mozzarella
  • 80 g arugula
  • some salt
  • some pepper, from the mill
  • 1 tsp honey
  • 2 tbsp balsamic vinegar, white
  • 2 tbsp oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Roast the pumpkin seeds in a pan without fat and let cool. Cut the watermelon into cubes or scoop out balls with a melon baller. Dice the mozzarella. Clean and wash the arugula, dry it on kitchen paper, and tear it into small pieces if necessary. Prepare a marinade with the remaining ingredients, season to taste, and mix everything together.
