Ingredients for 5 servings:

  • 20 balls of mozzarella (mini)
  • 20 cherry tomatoes
  • 40 chives
  • 3 tbsp olive oil
  • 1 tbsp mixed herbs (chopped)
  • Pepper, from the mill
  • 1 tsp lime juice or white balsamic vinegar

Working time approx. 15 minutes; Total time approx. 15 minutes

Finger food version of the well-known Caprese

Remove the mozzarella balls from the brine and drain (divide larger mozzarella balls accordingly). Mix the chives with olive oil and freshly ground pepper, add the mozzarella balls, and let them marinate for at least 3 hours (or overnight). Wash and halve the cherry tomatoes, sorting the basil leaves. Thread a mozzarella ball onto each toothpick, flanked on the left and right by a basil leaf and a cherry tomato half. Season the remaining olive oil marinade with a little lime juice or white balsamic vinegar to taste and spoon over the skewers. This finger-food-friendly variation of this classic dish tastes best with good buffalo mozzarella.
