Ingredients for 4 servings:
- 1,000 g potatoes
- 1 bunch of spring onions
- 4 large tomatoes
- 500 g minced lamb (or beef)
- 150 g sheep’s cheese
- 250 g sour cream
- 2 eggs
- 2 tbsp tomato paste
- 1 tsp thyme, dried
- 1 tsp spice mix, for gyros
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Boil the potatoes in their jacket potatoes, peel them, and cut them into thick slices. Brown the minced lamb in a little olive oil, season with gyro seasoning, thyme, salt, and pepper. Trim and chop the spring onions, then add them to the minced meat. Carefully fold in the potato slices and the chopped tomatoes. Then place the minced meat and vegetable mixture in a baking dish. Crumble the feta cheese over the top. Mix the sour cream with the eggs and mix with salt, pepper, and gyro seasoning. Pour over the casserole. Bake at 200°C for about 30 minutes. If you like, you can add other vegetables like zucchini or eggplant! Retsina goes perfectly with this!
